Digestible Sourdough is different than your typical Sourdough. Digestible Sourdough Doughs have gone through a long, cold fermentation process that in turn, yields a product that is “gut-friendly” and extremly low in gluten. I don’t call my breads & croissants gluten-free because I use a combination of hard white wheat & whole wheat to create my Sourdough baked goods. During this fermentation process before baking, the wheat is digested by the wild yeast in the sourdough. I use organic flour from sustainable Idaho & Washington farms & source local ingredients when available. Using the highest quality, sustainable ingredients is just as important to me as creating the highest quality baked goods for you. I prepare & bake everything out of a certified, FDA approved kitchen here in Boise, Idaho.
